Topic: noodles
Say, what about the topic? There are 2 noodles which I miss most of all in Vietnam.
Conclusion: I should learn how to make them.

Sometimes when it’s slow at work, the cook and I reminisce about foods we’ve eaten. More than any other, I remember fondly these two noodles.

In Da Nang, the local noodle was My Quang GA. These I ate sitting in a little red plastic chair on the side of the road. I eat it with chopsticks in my right hand and a chili pepper in my left hand.

The other noodle i love the most is Bun Ca. I had it in Hanoi in a narrow alley, sitting on a shiny metal stool. It was a hot bowl of thin round noodles in spicy broth with pieces of crispy fried fish.

I miss eating them so much, I want to learn how to make them. There is nothing that compares to those 2 noodles here in New Mexico.
